
Mexican Mince

Instructions
Dice the onion by removing the outer skins, cutting the onion into slices, then cutting slices into smaller pieces. Place in a small bowl for later.
If using fresh garlic, remove the outer skin and chop cloves into small pieces. Place in bowl with onion.
Chop carrots and capsicum into small pieces. Set aside in a small bowl and add the corn kernels to this mixture.
Heat oil in fry pan, large saucepan or electric frypan.
Cook garlic and onion until soft.
Add mince and brown.
Add carrots, capsicum, tomatoes and taco spice mix.
Bring to the boil, turn the heat down and cook gently for 10 minutes.
Add the kidney beans and heat through.
